Coconut Oil Mayonnaise
INGREDIENTS:
- 3 egg yolks at room temperature
- 1 teaspoon of mustard
- 1–1/2 teaspoon fresh lemon juice
- 2 tablespoons apple cider vinegar
- 3/4 cup of coconut oil, melted
- pinch of sea salt and black pepper
DIRECTIONS:
- In a blender, blend all ingredients except the coconut oil at a very low speed.
- Slowly drizzle in the oil. Let that mix for at least a minute.
- Scoop into container a and screw the lid on very tightly. Leave mayo out on counter for 7 hours before refrigerating.
